Capra Matilda is an organic farm of about 50 hectares, agricultural oasis affiliated with WWF and center of the VAGAL pilot project for biodiversity.

Year after year we raised endangered races of farm animals indigenous to the area, such as the Maremmana Cow, the Sheep of Amiata, the Goat of Montecristo, the Amiata Donkey, and also a slightly crazy horse called Milia, representing the small race of horse from Monterufoli. Today we are focusing mostly on olive trees and bees. We are also custodians of varieties of vegetables on the road to extinction, such as the Red Ball Tomatoes, the intriguing Fisherman's Gourd, and the infamous Red Garlic of Maremma.
